Description

A deep red to violet coloured clear viscous liquid with a flavour and aroma characteristic of cranberry.

This 65 Brix product is packed in 25kg aseptic bag-in-box units. This is a regularly held stock item.

Cranberries are grown throughout North America. They were originally used by Native Americans to treat bodily infections. The fruit is well known for its astringent nature and being full of antioxidants.

Not only are they a good source of dietary fibre and vitamin C, cranberries also contain a mixture of phytonutrients, which are compounds that contain antioxidants and anti-inflammatory properties. Evidence suggests that incorporating cranberry into a diet can help enhance overall health.

The harvesting of cranberries is a unique process; the crop field is flooded, which loosens the berries from the vines and causes them to float to the surface of the water. The berries are then picked and juiced. The juice is then heated to evaporate off much of the fruit’s water content.

The resulting concentrate is significantly reduced in volume and is six times the strength of a regular juice. It can be restored to its original strength by re-adding water once it reaches its final processing destination. Despite the additional processing, cranberry concentrate retains all its fantastic flavour, with a balance of sweet and sharp notes, and also maintains most of the berry’s nutritional benefits.

The reduced bulk of concentrates makes them much easier to store and move in bulk, reducing shipment times and storage requirements. Cranberry is just one of the 150 different juice-based products that we supply.

Industry Terms - Glossary
Aseptic Concentrate
Concentrate is heated to destroy micro-organisms and then filled into large sterile bags under aseptic conditions and sealed. This product does not require frozen storage for micro-biological reasons, but prolonged storage at high temperatures will lead to a reduction in product quality in particular regarding the colour of red fruits.

Frozen Concentrate
This generally refers to the product, which is not sterile and stored below -15°C in drums and below -7°C in bulk.

Pulp Sediment Concentrate
In cloudy juices, particularly citrus, cellular matter will sediment during storage. The amount of sedimentation can be quantified by centrifugation of the juice under standardised conditions and then reading the resulting volume of sediment.

Puree
All of the juice and a large quantity of the fruit’s fibrous matter are maintained. Insoluble matter is broken up to pass through a fine sieve which produces a smooth liquid thicker than the juice equivalent. Puree is available as concentrate or single strength.

Clarified
Juices can be clear or cloudy. Clarified juices are prepared by a combination of enzymatic pre-treatment followed by filtration of cloudy juices. The extra processing means that clarified juices tend to be less flavoursome than their cloudy counterparts.

Cloudy/Peel Extract
Cloudy concentrates are specialised citrus products manufactured by extracting de-oiled peel and pulp residues with hot water with the addition of pectolytic enzymes. Once filtered and extracted, the cloudy liquid is then pasteurised and concentrated to 50°Brix.

Comminute
Comminute is a whole fruit puree. All outer layers of the fruit are included by mechanically processing them to the consistency of a pulp and incorporating them with juice. Only citrus fruits are comminuted. Comminutes cannot be directly consumed, but are used in the formulation of drinks, primarily citrus squashes. Comminute is declared on the packaging as a mix of fruit/juice content or just fruit content.

Compounds
These are a blend of juices, flavours, colours, acids, stabilisers, often made for ease of use at soft drink production sites.
