The fine powdered spice milled from the dried unopened flower bud and stem of the evergreen tree of the myrtle family (syzygium aromaticum). It is a dark brown free flowing powder.

Cloves are an important component of garam masala, pickles and Indian sweets. Their warm, rich flavour works well for stews, bread sauces and sweet dishes. Germans use them for spiced bread and it is an essential ingredient for British mincemeat.

History: Cloves were first recorded as being used in China over 2000 years ago. Known to the Romans and in Europe through medieval times, they later became a source of intense competition between English, Portuguese and Dutch traders as all sought to establish themselves in the Spice Islands, the only place they were growing at that time. When Dutch Pierre Poivre smuggled seedlings to Mauritius, they would have the upper hand for the next few hundred years.
