Description

Our crushed chillies are the dried, heat treated and crushed fruits of Capsicum SPP. “Capsicum” is a genus of plant that includes many species where the fruits are used as vegetables or spices. Often, this refers to either Hot Chilli peppers, or the sweeter Bell Peppers. Hot Chilli peppers are related therefore not by genus, but that they all produce Capsaicin, an alkaloid irritant that provides the heat of the spice. Despite sharing the “pepper” moniker and providing a similar sensation of heat, Black Pepper contains piperine – not capsaicin.

Until Christopher Columbus introduced this fantastic plant to Europe, Chilli plants were isolated in America – but they have since spread across the world, changing the face of multiple cuisines (after all, could you imagine a kitchen in Thailand without Chillies?). Chilli is extremely important in most Native American medicine – with the capsaicin being used in many topical medications to relieve pain and inflammation. Chilli is used in many traditional household remedies around the world to help unblock sinuses – by keeping mucous thin they can lower the chance of sinus infections.
Capsaicin, the chemical responsible for the “heat” that makes Chilli so desirable, appears to have evolved as a defence mechanism against fungi and microbial infection. As the chemical is only an irritant to mammals, when insects poke a hole in the skin of the fruit, it leaves an opening for fungal and microbial infection to take root. Capsaicinoids slow the growth of microbes and make it impossible for infection to occur rapidly. Chilli peppers grown in places with a higher count of insects have been found to be much richer in capsaicin!

Our Chilli spices are crushed and contains yellow and red particulate. Packaged in bags.
